Creamy Butternut Pasta
The first cozy pasta of the season — and the sauce is pure roasted butternut, blended silky-smooth with no heavy cream in sight. You'll need
- 1 medium butternut squash (about 4 cups cubed)
- 12 oz pasta (fettuccine, penne, or your favorite)
- 3 Tbsp olive oil
- 4 garlic cloves
- ½ cup grated parmesan, plus more to finish
- ½ cup reserved pasta water (more as needed)
- ¼ tsp nutmeg (optional, but lovely)
- Salt & cracked black pepper
- Optional greens: 2 handfuls spinach or kale
- Optional protein: grilled chicken, Italian sausage, or crispy chickpeas
Make it
- Heat oven to 425°F. Toss the cubed butternut and whole garlic cloves with 2 Tbsp olive oil, salt, and pepper. Roast 25–30 minutes until very soft and caramelized at the edges — the caramelization is the flavor, so let it get golden.
- Meanwhile, boil the pasta until just al dente. Before draining, save a big mug of pasta water.
- Add the roasted squash and garlic to a blender with the parmesan, nutmeg, a good pinch of salt, and about ½ cup of the hot pasta water. Blend until completely silky. Add more pasta water until it’s a pourable, creamy sauce.
- Toss the sauce with the drained pasta over low heat until every strand is coated. Stir in greens now if using, until just wilted.
- Finish with extra parmesan, lots of cracked black pepper, and any protein on top. Serve warm.
